Resolve CE-2108 "Code variant"

Christina Jenks requested to merge CE-2108-code-variant into main

Previous changes created "monospace" variant, but this caused some kind of weird issue with how the fontFamily was being applied in existing customizations -- this is most obvious in the GitRefSelector story.

This changes the name of that variant to "code", and resolves that conflict/issue.
