Add aliases with updated PV prefixes

We are updating the PV properties of the SIM module, as they do not follow the best practices in PV naming, as defined in ESS-3218463 - ESS Rules for EPICS PV Property

The approach now is to use aliases with the new PV names, so we don't break compatibility with the currently deployed OPIs and Archiver. After the next commissioning run (or whenever is feasible), we can deprecate the old names and substitute them for the aliases, but this has to be applied together with an OPI and archiver update.

There are some properties that I couldn't figure out the meaning by the name (which is exactly the point of this MR), so some input is needed to finish it. MR will be left in draft until then.
